It’s no secret that eggs are high in protein. So why not add some additional protein and nutrients? Actually that’s my little way to get you to make some green eggs without ham, Sam I am. Though I won’t stop you if you’d like to somehow color your side of bacon, sausage or ham green.
Ingredients*:
- 3 Large Eggs
- 2 Green Onions
- 4 Large Leaves of Spinach
- 1/2 teaspoon of Honey
- 1/4 teaspoon of Salt
- 8 drops of Hot Sauce
- 2 strips of Peppered Bacon
- 1 – tbsp Canola or Olive Oil
Preparation:
Start two pans on the stove over medium-low heat. In one, put the tablespoon of oil to heat up. In the other put the bacon in and let cook over medium-low heat while you start the next step with the other ingredients.
Place the eggs, green onions, spinach, salt, honey, and hot sauce into a blender. Cover with the lid, then blend it all up until smooth.
Coat your skillet or frying pan with either the Olive Oil or Canola Oil. Heat it up and then pour the blended eggs in. Scramble up to 5 minutes or until the egg mixture is done to your liking.
Plate your Spinach Egg Scramble and Bacon, then eat to enjoy! I recommend a Pineapple Milk Fizz as your drink.
Cue the screaming guitars and slam! You’ve got amazing eggs for breakfast!
Prep time: 5 minutes. Total cook time: 10 minutes.
* Organic ingredients are desirable. Eggs from chickens raised without growth hormones and with natural feed is ideal. Bacon that has no additives, raised without growth hormones and that is uncured is the most ideal. Turkey or beef bacon can be a substitute – look for non-hormone and uncured. Salt – I recommend Real Salt brand or any non-iodized, non-bleached salt. Spinach, Green Onions, and Honey can be found organically.
